Subaida Aged Cheese Mahón‑Menorca Wedge 1/4

Origin & Production

Artisanal cheese from Subaida Farm, made with raw cow’s milk. The cows graze on our own pastures, preserving the characteristic nuances of the land. Molded using cotton cloth “FOGASSER”. Aged more than one year in our own cellars. Rind brushed with extra virgin olive oil and paprika.

  • Lactic ferments
  • Calcium chloride (stabilizer)
  • Rennet
  • Salt
  • Lysozyme (E‑1105, from egg white)

Flavour & Texture

Robust, authentic flavour with nutty notes and a salty touch. Firm texture with character, result of more than one year of maturation.

Storage

Once cut, wrap with cling film and store in a cheese dome in fridge or a sealed container. Can also be kept submerged in olive oil.
