Vic Country-Style Cured Sausage – IGP Certified

The Vic Country-Style Cured Sausage is a traditional Catalan delicacy produced in the Osona region of Barcelona. Protected by the Indicación Geográfica Protegida (IGP) "Llonganissa de Vic" since 2001, each whole piece weighs approximately 400 grams and is crafted following artisanal methods.

Ingredients and Crafting

This sausage is made from selected lean pork sourced from Landrace, Large White, and Duroc breeds. These pigs are castrated before fattening and slaughtered at a minimum of eight months of age. The meat is minced, seasoned with salt and pepper, and stuffed into natural casings. It is then naturally cured for at least 45 days, developing its distinctive flavor and firm texture.

Serving Suggestions and Pairings

Ideal as an appetizer served with olives or in sandwiches with tomato bread. It also pairs excellently with craft beers or young red wines.

Origin and Authenticity

This sausage is produced exclusively in Vic and surrounding areas, meeting the strict standards set by the IGP Regulatory Council. It stands as a faithful representation of Catalan charcuterie tradition and a hallmark of Mediterranean gastronomy.
