Traditional Curing Process

This ham undergoes a traditional curing process lasting over 26 months. Following the initial salting, it matures slowly in natural cellars with strictly controlled temperature and humidity. This extended aging process results in an intense flavor, a smooth texture, and a distinctive marbling of intramuscular fat.
