The Swiss Raclette Wheel Cheese (approx. 6 kg wheel) is a semi-cured cheese made with raw cow’s milk in the Valais region of Switzerland. As a DOP (Denomination of Protected Origin) product, it follows traditional artisanal methods, including slow pressing and ageing over wooden boards.
Production & Ageing
- Made from raw cow’s milk, salt, and rennet.
- Minimum maturation: 3 months, which gives it an elastic texture.
- Slow curing on wooden boards, pressed in the traditional way.
Tasting Notes
- Aroma: Soft, with milky and floral notes.
- Flavour: Balanced, with butter, nuts, and a subtle hint of damp earth.
- Texture: Semi-firm and flexible when cold; creamy and melting when heated.
Uses & Pairings
This Swiss Raclette is ideal for melting: over boiled potatoes, rustic bread, or with cured meats. Perfect for raclette machines or individual skillets. It pairs beautifully with dry white wines, young red wines, or mild beers.
Storage & Important Notes
- Store between 4 °C and 8 °C, wrapped in cheese paper or micro-perforated film.
- Consume preferably within 6 weeks of opening.
