This renowned Castilian sausage combines pork blood and extra rice with Horcal onions, premium lard, salt, and spices—including paprika and oregano—to create its distinctive savory flavor.
Ingredients & Protected Origin
- Made with regional Horcal onions (~40%) — autochthonous to Burgos and essential to authentic flavor.
- Contains approx. 20–25% rice, coagulant pork blood, lard (~15%), and traditional spice mix.
- Protected Designation of Origin (IGP) since September 5, 2018.

- Sliced and pan-fried until crispy edges and rice turns golden—excellent as a tapa or bocadillo ingredient.
