Campollano Aged Manchego Sheep Cheese with Rosemary

This Manchego curado de oveja con flor de romero Campollano combines the deep character of aged Manchego sheep cheese with the subtle herbaceous notes of rosemary.

Texture & Ripening

The cheese has a firm, yet sliceable texture typical of a well-matured Manchego. With age, it gains richness and develops complexity: a balance between dryness and creaminess.

Rosemary Aroma & Flavour Enhancer

Rosemary (flor de romero) adds an aromatic herbal layer — woody, slightly piney and fresh — which complements the nutty, tangy notes of the curado Manchego without masking its character.

Appearance

Exterior rind is moderately aged, pale golden-ivory colour. The interior (paste) is compact, pale cream with possible slight graininess, no large holes, consistent with other Manchego curados.

Pairings & Use in Cuisine

Excellent on cheese terraces, with quince paste, almonds or fresh bread. Pairs well with robust red wines, a dry sherry or aged wines. Also great grated over salads or melted lightly over rustic dishes.
