The La Antigua Semicured Sheep Cheese is produced in Castilla y León, Spain, using raw milk from selected sheep. Crafted with care and matured for 2-3 months, it balances intensity and gentleness.

Texture & Appearance

Its paste is creamy yet firm, easy to slice, with a natural rind that shows a light yellow hue. The cheese is fresh, moist, but with enough structure to hold its shape.

Flavour Profile

Rich and velvety, with milky notes and gentle acidity. You’ll sense the character of raw sheep’s milk, without the sharpness of fully cured cheeses. Pleasantly persistent in flavour.

Production & Craftsmanship

Made in small batches with natural rennet and traditional techniques. The raw ewe’s milk is unpasteurized, preserving aromas and microorganisms that contribute to flavour. Aging is carried out under controlled conditions for at least two months.

Serving & Pairings

Best enjoyed at room temperature. Slice thin or in wedges on a cheese board with rustic bread, nuts or quince paste. Also excellent in cooking—grated over salads, or used in tapas. Pairs well with young red wines, semi-dry whites or amber beers.
