Old Mahon cheese Mercadal large

Mercadal millet cheese.
It is a cheese with a square shape and rounded edges, made with cow's milk pasteurized and slowly matured. With highly evolved flavor and aromas, complex and intense with a long oral presence and a sweet little touch at the end. It suggests memories of old tan leather or maturation cava, a pungent sensation usually appears.
This cheese by the firm and hard texture, when cutting it scales.
As a suggestion in this format we recommend a special way of cutting it, we include a wedge-type knife to cut the cheese in the Parmesan style, it is a matter of first removing the top cover of the cheese and then with the wedge to make cheese chips slowly introducing the Wedge and giving a small twist of wrist as you will see in the video.
This cheese you can find in two formats large piece of 2.5 kilos and small piece of 800 g. It should be emphasized that a large cheese is always better since the large cheese has had to cure for a longer time (in this case more than a year) instead the small cheese by its size with 4-5 months is enough.
